Ratings are obviously the main indication, so maybe worth putting a proviso in your listing saying anyone with a rating lower than X amount email you before they bid, to convince you their genuine,

Don't get sucked into loads of correspondence with someone dicking around after they have won, give 'em an ultimatum and start non-paying bidder forms procedure so you get back the % of the winning bid ebay take.
