I'm also surprised there everybody mentioned more male singers / bands then female artist (no I don't mean Britney).
What about:
Hole
Patty Smith
Alison Krauss
Tori Amos
Lauren Hill
etc.
OK - if we're not sticking with the heavier end of the market, here's a list of my favourites (some of these are probably mentioned in another thread waaaay back):
Barenaked Ladies - Canadian Singer Songwriters - famous for One Week single. Best live act I've ever seen bar none. Very strong lyrically, and fantastic musicians. Standout Track - maybe too many to list, but for me it would have to be Call and Answer.
Amy Mann - singer-songwriter mainly known for the soundtrack to Magnolia, which was actually made because the director loved her music so much. Standout track - Wise Up (the one they sing along to in Magnolia)
Plus-Tech Squeezebox - mental Japanese j-pop/punk/lounge. Impossible to describe, but their album's the first one to make me grin from beginning to end when I first heard it. Standout track - Early Riser
Pizzicato Five - Japanese lounge/pop. Were at one time the biggest band in Japan. I first heard them on a skate video and it took me 2 years to find out who they were as they weren't credited. Standout track - Tricky Tricky.
Alabama 3 - Acid/country/hip-hop/blues combo. They feature harmonica's heavily, which means I love them from the start. If you like Blues, then they are defnitely worth a listen. Standout track - well, they're best known for the opening credit song from The Sopranos, Woke up this Morning.
Pixies - possibly the best band there ever was. Stand out track....well, I like Vamos, but it's pretty raw. Planet of Sound is good too, if only for the line "this is the planet of sound, this ain't no fuckin' around".....
Belle and Sebastian - genius, if a little fey, pop. Lyrics are much darker than the music suggests. Known (if at all) for beating S-Club Seven in the best newcomers award at the Brits (which REALLY pissed off Pete Waterman

It turned out that Belle and Sebastian only have about 10,000 fans worldwide, but they pretty much ALL voted, whereas SClub morons couldn't use the internet unless their mums were present). Stand out track, well, I really like Judy and the Dream of Horses, but you need to listen to quite a bit of their stuff really.
Jayhawks and Golden Smog - alt.country/americana bands. You can get away with admitting to liking these two without having to admit liking country music and all the baggage that carries with it.
Little Walter - fucking awsome blues harmonica player. Long dead, so his records are cheap if you can find them.
Muddy Waters - best bluesman by far in my humble. See above for pricing of his albums.
Weezer - great summery surf punk music.
Blur's latest, Think Tank, is absolutely great.
Bjork - Vespertine. One of my favourite albums of all time. Difficult, but rewarding. Vespertine Live on DVD is sublime to watch.
Beastie Boys - Ill Communication would also be one of my top albums, but all of their albums are worth a listen. The In Sound From Way Out is a fantastic BB instrumental album in the style of 70's blaxploitation movies....track it down - it's normally very cheap and makes a good one to put on for parties/porn movies.
Newish artists :
Franz Ferdinand - New New Wave for the naughties. A bit like Adam Ant's first album Dirk Wears White Sox, but not as good. Mind you, what is? Dirk... is one of the best albums of the 70's / early 80's.
Scissor Sisters - Elton John for the naughties....
Bic Runga - if you like Norah Jones/Katie Melua you'll probably like Bic.
In order to destroy any credibility I have left, I'll also admit to liking Robbie Williams, and I think he's one of the best 'entertainers' that the UK have produced in a very long time.... /hides behind sofa
